This sounds amazing! I have never tried chestnuts. How exciting you are traveling to America, I've always wanted to ice skate outdoors :)

lol. I've always been fascinated by roasted chestnuts too. They're awesome from street carts in the winter but it's usually so freezing outside that the chestnuts get cold and hard to peel so quickly. I'm sure your trip will be amazing, and this cake is a tasty consolation in the interim. The texture looks fantastic.
